Happy 1st Birthday Abe!!

Oppps, it's been a while!  Yup, I got a little overwhelmed for a little while there!  I even turned a couple orders down.  Sorry everyone! Remember, get your orders in soon for those open houses.  Not many dates still open!

Today, my good friend, Jenn's little miracle turned ONE!  Part of the birthday theme was frogs, so this is what I came up with.  Enjoy!

Jenn also asked if I would make a couple Coffee ones for her :-).  If you are a coffee lover, this one is for you!

Hope everyone has been enjoying this warm weather!!  Believe it or not, I haven't baked all week until yesterday--I've been so into this weather!

No St Patty's cupcakes here.......today I'm sharing with you my recipe for Shamrock Cookie Bars

Ok, I'm not going to lie, I cheated a little.  The Chocolate Chunk Cookie recipe came from Martha Stewart; you can find the recipe HERE.  I did however bake the entire recipe in a 9" x 13" pan for about 25 min instead. 

Mint Frosting:

1 stick unsalted butter, soften

2 cups powder sugar

1-1/2 tsp pure mint extract

2 tbsp milk

8 drops of green food coloring

1/2 cup {or more} cool whip

Using a stand mixer, mix all together{except for cool whip} for about 5 min.  Using a spatula, slowly fold in the cool whip.

I also topped the frosting with Andes Mint Chunks and drizzled with chocolate ganache!

Strawberries

Everyone knows I love cupcakes, right?  Well, I went a little crazy this week and made a "meatloaf cupcake".  Ha, I know I'm silly but I'm always thinking of creative food ideas.  You can find my recipe Here

Anyways, back to strawberries, right?  It seems like it's been a very long time since I've had a yummy strawberry, and I got that this week!  I've been waiting to make my Strawberry Cupcake until then.  I probably will only offer this until June or until the strawberries start tasting yucky, lol.

I was recently involved in a surprise for a good friend of mine.  She really wanted s'mores muffins for her birthday, which her MIL makes---but to her surprise her MIL contacted me for a dozen of S'mores & a dozen of Oreo cupcakes!! Happy Birthday Jenn!
